Preparation:
Slowly defrost the meat (in the refrigerator or at room temperature). Before frying dab dry and season just with freshly ground white pepper. Sauté the meat in a preheated frying pan or grill until crispy.
Cook each side for approximately 1 minute, then very slowly fry the meat at a medium heat for approximately 3-5 minutes until ready.






  Where to use:
The meat is very suitable for the à la carte business, for banquets and lunch buffets or as a main component of a set meal. It is particularly low in calories and therefore a welcome change to other types of meat in the barbecue season.

Recipe idea:
For the mustard sauce chop shallots finely and ice in butter, deglaze with wine.
Add bay leaf, thyme, mustard and game stock, reduce to half, stir in fresh cream.
Wash mushrooms and cut into slices, chop shallots and ice in butter, add mushrooms and cook until almost finished on a medium heat, add garlic and wine and reduce liquid fully.
Sauté meat in oil on a medium heat, turn after approximately 10 mins. depending on thickness and fry for another 10 minutes. Arrange mushrooms in the centre of a well-heated plate, cut meat into slices, place around the mushrooms and cover with sauce - serve immediately.
